I’m slightly changing my publishing schedule.

From now on, I’ll be posting a new article once per week on Mondays.

After a brief trip to San Pedro, Côte d’Ivoire’s thrumming cocoa export hub, I’m keen to dive into some of the idiosyncrasies of the cocoa trade.

In my next post, I’ll be looking at the key step of fermentation in the post-harvest process of raw cocoa beans, which gives chocolate its indelible taste.
